As an Integrative Health Coach, specializing in thyroid and digestive health, I like to focus on the best foods for optimal health. As you slowly fill up on the most nourishing and satiating foods for your body, the cravings and hunger for the processed, damaging foods will slowly disappear. It really does work!

Chard is my focus this week as I can’t get enough of this amazing powerhouse. Out of all the leafy greens out there, this is my favorite. It is the least bitter and one of the most nutrient dense of all the greens-and so easy to prepare!

This weeks health goal is for you to go to your local farmers market or farm stand (above is a picture of Anderson’s Farm Stand in OOB-my favorite) and experiment with one new leafy green or vegetable. I have included a recipe below to help you get started.

Enjoy this easy, delicious five step recipe. Feel free to add in your favorite ingredients or any other leafy green for extra flavor and variety.

Simple Delicious Chard
Serves 4

5 Ingredients:

1 1/2 Pounds Red or Swiss Chard
1 Tablespoon Olive Oil
2 Cloves of Garlic Pressed or Thinly Sliced
2 Tablespoons of Water or Broth
Salt/Pepper/Fresh Lemon to taste

5 Simple Steps

1. Wash the chard leaves and strip the leaves from the stalks. You can save the stalks for another use.

2. Coarsely chop the greens. Heat oil in a skillet over medium heat. Add garlic and saute for about two minutes until garlic is golden.

3. Add greens and stir to coat with oil. Add 2 T water, cover, and cook until greens are wilted- about 3-5 mins.

4. Season with salt and pepper. Add fresh lemon if desired.
